The Appellation d’origine contrôlée (AOC) Aloxe-Corton may be used for red and white wine with respectively Pinot Noir and Chardonnay as the main grape variety. The production consists of almost only red wine, around 98 per cent, and only around two per cent white wine.
Aloxe-Corton shall be served between 15 and 17°C ; it can be kept between 5 and 15 years.
The red Aloxe-Corton is made from Pinot noir : the wines are powerful, rich, coloured, wines for laying down. They are usually moderately tannic. The colour is dark red, ruby, garnet, red and black fruit, robust and structured. They develop aromas of red fruits and truffle. They can be served with venison, duck, red meat.
The white Aloxe-Corton is made from Chardonnay : the Chardonnay berries can be very sweet, but can keep an important sourness, which allows to obtain well balanced wines, with a lot of fat and of ampleness. They offer fragrances of cinnamon, honey, butter, and agrees with Reblochon cheese.
